Protein Pancakes

Since working out with Bill Waltzek, my Personal Trainer, and learning the in’s and out’s of nutrition, I have also found ways to be more creative with the healthy foods I consume. Once you get to know the basics, you can tweak them to your liking. For instance, this is great recipe I found on the Men’s Health website while prepping for my competition: Protein Pancakes. It is so basic which makes it great for incorporating a fruit or nut butter of your choice.

Ingredients:
1 egg
2 whites
1 heaping scoop of protein powder (I like to use chocolate)
Coconut oil for coating pan (Just a few shavings coats it)
1 tbsp almond butter (or nut butter of your choice)
Directions:
Scramble all of your eggs together. Add your scoop of protein powder to that mix. Stir it really well with a whisk to ensure there aren’t any lumps. Warm your coconut oil in pan. Pour the mix in. Cook until it bubbles. Flip and cook for another few minutes. Transfer to a plate and spread your butter on.

Notes:
*I like to use a brush to spread the coconut oil evenly throughout the pan, especially the sides to prevent sticking.
*Also, I use a smaller pan so the pancake is more compact.
*Feel free to slice a banana on top too.
